Carrot Raisin Salad





Carrot Raisin Salad

3 Medium Carrots, shredded 
1 container mandarin oranges in light syrup* (I used one of the little plastic cups)
juice of one lime
1/2 C raisins (I dried my own)
1 T Milk
1 T Honey
1 T Mayo

Add all ingredients together.
*Wait until the end to add the juice from the mandarin oranges container. That way you can choose how much liquid you want.

This recipe is really sweet, so I would eat it as more of a healthy dessert, instead of a "salad".  The whole recipe has about 500 calories, but you could break it into 2-3 manageable servings.
